Your Diwali mithai box called. It wants a wardrobe upgrade. While kaju katli, motichoor laddoos and soan papdi have their loyal fan clubs, we’re making room for something a little more indulgent this festive season. Pistachio baklava! Yes, the Middle Eastern dessert that’s essentially a love letter to buttery pastry, crunchy nuts and unapologetic sweetness. And if your festive spread could do with a little international flair, this golden, syrup-soaked beauty is just the plot twist it needs.

Those beautifully stacked pastry layers, flecks of emerald-green pistachios and perfectly cut diamond-shaped pieces look straight out of a boutique patisserie. The best part? You don’t need a professional pastry chef’s credentials to pull this off. A little patience, good-quality filo pastry and a generous hand with the pistachios are pretty much your ticket to a dessert that looks expensive, tastes decadent and might just steal the spotlight from the Diwali spread.

Pistachio Baklava Recipe: Ingredients

Preparation Time: 25 minutes

Cooking Time: 40–45 minutes

Servings: 16–20 pieces

Ingredients

For the baklava

  • 250 g filo pastry sheets
  • 200 g unsalted pistachios, finely chopped
  • 100 g unsalted butter, melted
  • 2 tbsp caster sugar
  • ½ tsp ground cinnamon
  • For the sugar syrup
  • 150 g sugar
  • 120 ml water
  • 1 tbsp honey
  • 1 tsp lemon juice
  • ½ tsp rose water (optional)
  • Crushed pistachios for garnish

Method

Preheat your oven to 180°C and lightly grease a rectangular baking tray with melted butter. Finely chop the pistachios and mix them with caster sugar and cinnamon in a bowl. Now comes the layering game. Unroll your filo pastry sheets and keep them covered with a slightly damp kitchen towel so they don’t dry out.

Place one sheet in the baking tray, brush it generously with melted butter and repeat with approximately half the sheets, making sure every layer gets its buttery moment. Spread the pistachio mixture evenly across the pastry, then cover it with the remaining filo sheets, brushing each layer with melted butter. Using a sharp knife, cut the assembled pastry into diamonds or squares before it heads into the oven. Bake for 40–45 minutes until the top turns gloriously golden and crisp.

While your baklava works its magic in the oven, get started on the syrup. Combine sugar and water in a saucepan and bring to a gentle boil. Add honey and lemon juice, then let the mixture simmer for 8–10 minutes until it thickens slightly. Take it off the heat and stir in rose water if you fancy a delicate floral note.

Once the baklava comes out of the oven, pour the cooled syrup evenly over the hot pastry, allowing it to seep into all those glorious layers. Resist the temptation to dig in immediately and let it rest for at least 4–6 hours so the pastry absorbs the syrup properly.

Finish with a generous scattering of crushed pistachios, and your homemade festive indulgence is ready to make its grand entrance.
